Unlike sunflower oil or soy lecithin, Sunflower Lecithin is derived from dehydrated sunflower seeds using a cold press system, similar to crafting extra virgin olive oil. It's not a seed oil, and it's free from the concerns associated with soy lecithin, making it a health-conscious choice for the protein bar.
